The No-Bake Avocado Lime Cheesecake is an excellent alternative to the ol’ holiday stand-by of pumpkin pie. It’s slightly tart and buttery, a great end to a meal. If you like desserts that aren’t overly sweet, this might be for you.
My favorite part of this recipe is how easy it is. You simply mix, pour, and chill. It’s both proof that desserts don’t have to be complicated AND an excellent way to wrap up dinner. The cheesecake has just enough sweetness to feel like a real dessert. Or if you’re really daring, serve it before the meal, as an alternative to a salad! It’s got a vegetable in it!
Just kidding, it’s a fruit.
Avocados are mostly seen in savory concoctions like guacamole. In truth, the humble avocado has a myriad of applications. Throw one in a smoothie for added richness and good fats, or use them in place of eggs for baking, or butter in…just about anything.
In this recipe, the avocado adds velvety smoothness without a strong flavor. Choose a large avocado that is fairly ripe and soft, which is easier for mixing.

The citrus component in the recipe is also flexible. Use lemon instead of lime juice if that’s all you have on hand. Either way, the citric bite marries nicely with the creaminess of the avocado and is enhanced by the zesty topping.
To extend the ease of the recipe, I highly recommend using pre-made pie shells. There’s no shame in this shortcut! Especially during this time of year, there’s no reason to add to your cooking stress.

No-Bake Avocado Lime Mini Cheesecake
Ingredients
- 1 large avocado, soft or slightly overripe
- 8 oz cream cheese
- 1 can condensed milk (about 14 oz)
- 1/3 cup lime juice (about 4-5 limes)
- 12 mini pie cups
- zest of 1 lime
Instructions
- Blend the avocado, cream cheese, condensed milk, and lime juice together until smooth. It helps if the avocado is really soft and slightly overripe as it makes it easier to blend.
- Pour or spoon into the mini crusts.
- Chill for at least an hour (or up to overnight).
- Zest lime on top of each cake before serving. Enjoy chilled.
